Lentil Salad with Apple Dressing & Fried Cheese

A lentil salad with apple dressing and fried cheese is a wonderful treat that is super easy to prepare. The great thing is that you need relatively few ingredients, but you still get a delicious dish.

For this dish you will need:

Red lentils: These are characterised by the fact that they have a relatively short cooking time of 10 minutes. The cooking process is therefore very quick.

Vegetable stock: The vegetable stock adds a lot of flavour to the red lentils during the cooking process. I use my homemade vegetable seasoning for this. Of course, you can also use grained stock.

Lamb's lettuce: Lamb's lettuce is a winter salad and is currently available everywhere. It is important to wash lamb's lettuce properly, as the small roots tend to get soil and small stones stuck in them.

Almonds: A nutty component almost always goes well in a salad. I have chosen almonds. Hazelnuts would also work very well here.

Apple: We serve a dressing with pieces of apple with this salad. This is the gamechanger, as they say these days. The sweet and sour apple goes perfectly with the lentils, lamb's lettuce and almonds.

Fried cheese: As a special treat, we serve a fried cheese with this salad. Halloumi or another fried cheese is very tasty here. You can also roll feta or shepherd's cheese in a little cornflour and then fry it. Vegan cheese also works well here.

Apple and lentil salad with lamb's lettuce and fried cheese.

Servings: 2

Preparation time: 25 minutes

Ingredients:

  • 100g red lentils
  • 1 teaspoon grained or homemade vegetable stock
  • 50g lamb's lettuce30g coarsely chopped almonds
  • 2 tablespoons oil1 pack of halloumi or fried cheese, vegan if you like

Dressing:

  • 4 tbsp olive oil
  • 2 tbsp apple vinegar
  • 1 tbsp maple syrup
  • Salt & pepper
  • 1/2 apple

Preparation:

  1. Cook the red lentils in 1 tsp vegetable stock according to the instructions on the packet until soft.
  2. Sort the lamb's lettuce, rinse thoroughly and spin dry.
  3. Roast the almonds in a pan until golden brown.
  4. For the dressing, mix the olive oil, apple vinegar, maple syrup, salt and pepper and season to taste.
  5. Cut the apple with peel into small cubes and stir into the dressing.
  6. Fry the cheese on both sides in a pan until golden brown.
  7. The lentils can still be warm when you serve them. Place the lentils on plates, drizzle the apple dressing over them and add the almonds and lamb's lettuce. Serve the salad with the fried cheese.
